This is one of my all-time favorite meals. My absolute favorite food is Mexican, and my Mexican friends all seem to make fun of me because it has kidney beans instead of meat. I first had this while working in a pizza joint in New Jersey. The restaurant served honey mustard sauce with chicken fingers which was one of the best things on the menu. One of the cooks got tired of Italian and, on a nice summer day, made a batch using pizza dough to make tortillas. Years later, I got a job working at Islands Restaurants based out of Southern California, and this was a fairly popular menu item. Unfortunately, it’s no longer on the menu, but you can still order it. The recipe has changed over the years because they don’t stock the ingredients from the original recipe, which included sprouts. I personally like sprouts on this, but usually, I leave them out.
Tips For Making Amazing California Tacos
The most important thing for getting this recipe right is fresh ingredients. The honey mustard dressing which you can find in our recipe here, it’s super easy to make and includes only three ingredients. Don’t waste money buying honey mustard dressing. You need a good fresh flour tortilla, I recommend using six-inch if you can find them. I find that getting a nice quality mild cheddar cheese like Tillamook or even Craft and freshly grading the cheese makes a huge difference.

California Tacos
If you have never had California tacos think of them as a salad wrapped in a tortilla with kidney beans instead of taco meat. It must include avocado and is always served with honey mustard dressing. Check out our honey mustard recipe, which is best to let cool for an hour.

Ingredients
12 Flour Tortillas (six-inch size)
1 Avocado
2 Roma Tomatoes
1/2 Cucumber
8 ounces Shredded Mild Cheddar Cheese
1/2 Can Kidney Beans
4 Table Spoons Honey Mustard Dressing
Instructions
1 – Drain Kidney Beans and rinse meal tastes better with dry kidney beans this is why this is the first step.
2 – Chop Fresh Vegetables.
3 – Warm Flour Tortillas
4 – Place a generous amount of Cheddar Cheese on Tortillas
5 – Add about 10 Kidney Beans (don’t use too many)
6 – Add Vegetables (equal amounts of Cucumber, Tomato, and Avocado)

Tastes best with cold vegetables.
