Do you love cucumbers, avocados, goat cheese, and salad? These are some of my favorite things to include in a salad. I’m not a fan of lettuce, and I got the idea for this because a local chain has a Chicken Pasta Salad that I love. I figured, why not have a pasta salad with all my favorite ingredients? I used my Greek Dressing Recipe, which I think goes great with the goat cheese. I prefer goat cheese over feta, and I think it works great here because it gives the pasta a creamy texture.

Goat Cheese Cucumber Pasta Salad
Cold pasta salad with tons of the most popular gourmet salad items such as goat cheese, herbs, and avocado.

Ingredients
- 4 ounce Pasta
- 1 Cucumber
- 10 Cherry Tomatoes
- 1 Small Red Pepper
- 8 ounce Goat Cheese
- 2 Scallions
- 1 Tablespoon Fresh Dill
- 2 Table Spoons Olive Oil
- 2 Table Spoons Redwine Vinegar
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Onion Powder
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Black Pepper
- 1/2 Teaspoon Oregano
- 1/2 Lemon
Instructions
- Cook Pasta and rinse with cold water
- Cut cucumbers in quarters
- Cut cherry tomatoes in half
- Dice scallions and mince dill
- Add the above into a bowl and mix with olive oil and red wine vinegar
- Add spices. Salt, Pepper, Onion Powder, Garlic Powder, and Oregano
- Chop Goat cheese into chunks, add and mix into salad
- Squeeze lemon on top and mix
- Let salad cool in the refrigerator for up to an hour
- Chop avocado and serve with avocado on top
Notes
One thing to keep in mind is that fresh. dill can be very strong when fresh. If you don’t want it to overpower the salad, feel free to add less. I love fresh herbs. This would also work great with fresh oregano. I use cherry tomatoes because I love their flavor, but you can add regular tomatoes or even grape tomatoes if cherry tomatoes are costly. If you want this to have more of a Greek flavor, you might want to add olives.
