Goat Cheese Cucumber Pasta Salad

Goat cheese cucumber pasta salad tops with avocado

Cold pasta salad with tons of the most popular gourmet salad items such as goat cheese, herbs, and avocado.

Ingredients

  1. 4 ounce Pasta
  2. 1 Cucumber
  3. 10 Cherry Tomatoes
  4. 1 Small Red Pepper
  5. 8 ounce Goat Cheese
  6. 2 Scallions
  7. 1 Tablespoon Fresh Dill
  8. 2 Table Spoons Olive Oil
  9. 2 Table Spoons Redwine Vinegar
  10. 1/2 Teaspoon Garlic Powder
  11. 1/2 Teaspoon Onion Powder
  12. 1/2 Teaspoon Salt
  13. 1/2 Teaspoon Black Pepper
  14. 1/2 Teaspoon Oregano
  15. 1/2 Lemon

Instructions

  1. Cook Pasta and rinse with cold water
  2. Cut cucumbers in quarters
  3. Cut cherry tomatoes in half
  4. Dice scallions and mince dill
  5. Add the above into a bowl and mix with olive oil and red wine vinegar
  6. Add spices. Salt, Pepper, Onion Powder, Garlic Powder, and Oregano
  7. Chop Goat cheese into chunks, add and mix into salad
  8. Squeeze lemon on top and mix
  9. Let salad cool in the refrigerator for up to an hour
  10. Chop avocado and serve with avocado on top

Notes

One thing to keep in mind is that fresh. dill can be very strong when fresh. If you don’t want it to overpower the salad, feel free to add less. I love fresh herbs. This would also work great with fresh oregano. I use cherry tomatoes because I love their flavor, but you can add regular tomatoes or even grape tomatoes if cherry tomatoes are costly. If you want this to have more of a Greek flavor, you might want to add olives.
